Freezer Cooking: Barbecued Meatballs Shredded Pork

I had planned to make shepherd's pie for the freezer this week, but chickened out. I've never frozen mashed potatoes before, and wasn't sure how they'd turn out. Besides, barbecued meatballs are soooo yummy!


Since we're getting low on ground beef I only used three pounds which made enough meatballs for lunch plus two quart sized zip-top bags full.

While I was cleaning out the deep freezer, I found several bags of pork that we'd never got around to grinding for sausage, so I put one in the crock-pot over night and shredded it up this morning.
Pre-cooked, shredded pork will be nice to have on hand for barbecue sandwiches, shredded pork tacos, and who knows what else ;)


This was only the second time I've made barbecue meatballs, but we really love them, and I have a feeling that they'll become a regular entry in our freezer cooking. :)
